Erika & Dan's Wedding Day

October 5th was a beautiful day for a wedding! The weather was perfect and the setting was gorgeous! Erika & Dan chose  Mount Gulian for there event and it could not be more perfect.

For there menu the beautiful couple chose to start with a couple of passed crostini's and a cheese and cracker station. Erika's mother also brought some chicken & beef empanadas and nice little tea sandwiches to add to the cheese station. Rounded the table out nicely. For dinner the couple chose to have it served Family Style. Each table had platters of Pulled Pork, Smoked Chicken Breast, Mac & Cheese & of course our signature salad. It was a nice change to serve this way.

Erika's decor was outstanding! From the flag runners made of maps to the beautiful owl vases that held simple but impressive paper flowers. The mini white pumpkins on the sage green napkins finished the gorgeous family china! 

This was a beautiful way to end our season! (even if we did get soaked and full of mud at clean up) It was a fun event with the best crew!

Hardscrabble Day

It's that time of year again! The leaves start changing, the nights get cooler and the thoughts of pumpkins and turkeys swirl in our heads! 

Summer is not over yet! We have time for one or two more flings! Hardscrabble Day will be on September 21st. We will be out there all night smoking up some Fresh Genuine Q and have it ready for ya by 10am!

~Lovely August~

Well it is August again! The time of year when things slow down a bit for us here at HCQ. We are gearing up for Hardscrabble day though. This year it will be held on September 21st 10:00am to 7:00pm. Street wide yard sales, Local business's out there showing you their stuff and of course the food!

The on September 28th High Country Que will be in Hyde Park off Pine St at Hackett Hill for their annual Fall Festival. 

We are looking forward to both events this year! Come check us out, we got some new things on the burner!

June 16th Tasting

On Fathers Day we will be holding a tasting for Luz Cazunue for herself and 3 others. There wedding is scheduled for October 5th of this year! We're excited to be meeting everyone this weekend. Wonder what I'm gonna serve this time!

June 8th ~ Nancy & Andy

We spent this weekend in a beautiful old Dairy barn perched on a mountainside in the Catskills. We had to hike the equipment up there a couple days early because of the rainy weather we have been having around here. What a day this was. 

Nancy and Andy had there 4 beautiful boys walk them down the isle, and the pre walk huddle was pretty emotional for those of us who saw.

June 1st 2013~ Our own Wedding Weekend

There are a few moments in life that you will remember forever. June 1st is one of those moments I will remember forever. It is the day I married the other half of my soul! Joe and I have been together for 19 years. We have 4 great kids together and have built ourselves a pretty great life! When he's not out there mowing lawns he's helping me with the BBQ catering, which he loves. Me and lawns, not so much! 

The entire weekend was a magical weekend filled with the best family and friends. Everyone pulled together, worked real hard, got a little crazy and made the day wonderful! I love you all, Thank you all for everything you did for us!

Joyelle & Peter May 25th 2013

Joyelle & Peter were married on May 25th at a cute little church here in Clermont. There reception was held at New Yorks first public school. Gorgeous, historic little place. Joyelle's mother, Desiree did a fantastic job decorating for her beautiful daughters special day. 

Cooking that day was quite the challenge. We had a spring noreaster come up the coast and the wind blew with force. I was stirring with one hand and holding the tent (with 3 other people mind you) with the other. It can only be described as Forces Of Nature! In the end it tured out to be a beautiful evening!

BBQ Festival is Mass

Ok so I have not blogged in a while. My apologies. We have been steady catering for a month now, busy busy! Back in May Joe & I went out to Massachusetts to a great little BBQ Fest. It was a beautiful, relaxing day. we had some great Q, checked out some teams and listened to the best band I've heard in awhile. I love going to these fests, Joe gets so excited. He starts saying, we can do this, I wanna compete. Yes dear!

Hillary & Megan's Wedding

We just spent the weekend at the most wonderful Bed & Breakfast in Wallkill Ny with the most wonderful hosts and two very beautiful brides! Hillary & Megan came for a tasting last year and we were thrilled that they chose us to cater for them on the spot! I've heard Hillary explains our food as "Slap your mama good". Joe Can not stop repeating this now! 

I would like to again give my thanks to my crew! Without them, things would not have got done! Jessica, thank you for keeping me hydrated, sane and on track! My dear daughter Daisy, Thank you for being the light of the day and the one I could yell at, James, Thank you for keeping everything organized, all of your hard work never goes unnoticed, Bryan & Danny, my double trouble team, my muscle, you guys keep it rockin every time!! Karen, my best friend, Thank you, thank you, thank you for filling in! Thank you for keeping me straight when my mind was in circles! Alex, the new girl :) thank you for all your hard work and help, we look forward to having you with us more! And last but never least, My soon to be husband Joe, my teammate, my other half, there are no words to let anyone understand how hard you work, without you I just could not do what I love! I love you, Thank you!!!

Apple Blossom 2013

High Country Que will be at Apple Blossom Day festival again this year right in front of the stage! May 11th in the town of Red Hook NY!!  We will be serving BBQ all day. Serving out oh so famous Pulled Pork Sandwich, St.Louis style sticky ribs, Smoked Chicken Quarters and our genuine BBQ sides Joe's BBQ Baked Beans & Apple Cider Slaw! Come on down and join the fun and get some Q!!!!!!!!!!!!

We have a small contest this year. Name our candied bacon and win a $10.00 gift cert. for some Q on Apple Blossom Day. The bacon is made with real maple syrup, brown sugar and chipolte pepper! Be creative! 

Winner will be announced April 15th on our Facebook Page. 


I will not be available for phone calls for the next couple of days. Unfortunatley with the snow coming, I will be in the plow truck for a couple of days plowing my butt off! ~ Tasting Update ~

The tasting went really well. Pulled Pork came out moist as moist can be. Ribs wer FANTASTIC! It was a pleasure to meet Karen and her fiance Steve! Great couple. Love that Karen loves food like I do!! I love being able to smoke in the winter. It brings back to all the memories of the great gigs from the year past! I also enjoy being able to have my sister Ann come and help.She saves my poor knees from going up and down the stairs! Love her!

~Homemade Dewy Snacks ~

Woke up this morning and decided to make some homemade soft pretzels! They are soft and chewy! I made half of them with garlic butter. The pit chef will be taking half of the batch bear hunting with him this weekend!
Here's the recipe.....Enjoy


  • 1 1/2 cups warm water
  • 2 tablespoons light brown sugar
  • 1 package active dry yeast (2 1/4 teaspoons)
  • 3 ounces unsalted butter, melted
  • 2 1/2 teaspoons kosher salt
  • 4 1/2 to 5 cups all-purpose flour
  • Vegetable oil
  • 3 quarts water
  • 3/4 cup baking soda
  • 1 whole egg, beaten with 1 tablespoon cold water
  • Coarse sea salt


  1. Combine the water, sugar, yeast, and butter in the bowl of a stand mixer and mix with the dough hook until combined. Let sit for 5 minutes.
  2. Add the salt and flour and mix on low speed until combined. Increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 3 to 4 minutes. If the dough appears too wet, add additional flour, 1 tablespoon at a time.
  3. Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.
  4. Oil a bowl with vegetable oil, add the dough and turn to coat with the oil.
  5. Cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.
  6. Preheat the oven to 425 degrees F.
  7. Bring the water to a boil in a small roasting pan over high heat and add the baking soda.
  8. Remove the dough from the bowl and place on a flat surface.
  9. Divide the dough into 8 equal pieces, about 4 1/4 to 4 1/2 ounces each.
  10. Roll each piece into a long rope and shape into the lengths or shapes that you want (sticks are easy and tasty).
  11. Boil the pretzels in the water solution in batches. Boil for about 30 seconds. Remove with a large slotted spoon.
  12. Place pretzels on a baking sheet that has been sprayed with cooking spray. Make sure they are not touching.
  13. Brush the tops with the egg wash and season liberally with the salt.
  14. Place into the oven and bake for 15 to 18 minutes until golden brown.
  15. Add additional toppings immediately after they come out of the oven.
